Porch weather is waning, but brunch has no season. What’s more, brunch’s No. 1 whistle-wetter, the bloody mary, is timeless. Here are two takes on the bloody mary perfect for a porch or a breakfast nook. One, from Denver-based Snooze, an A.M. Eatery, goes extra spicy with Thai seasoning and everyone’s favorite chili paste, Sriracha; the other concoction, from Seersucker Southern Style Gin, subs gin for vodka and tosses in a handmade mix that’s a cinch to throw together.

The Cocktail

Ice
1½ ounces vodka
1½ ounces Sriracha mix (a blend of Sriracha sauce, garlic chili paste, fish sauce or soy sauce, and lime juice, to taste)
3½ ounces bloody mary mix
1 basil leaf, torn
3 – 4 cilantro sprigs
Chopped pepper-seasoned pickle, for garnish
Cherry tomato, for garnish
Lemon wedge, for garnish

Rim Garnish (optional)

Togarashi seasoning (available at retailers such as Walmart, Whole Foods Market, Amazon, and more)
Kosher salt

Mix equal parts Togarashi seasoning and Kosher salt on a small plate. Moisten rim of glass and garnish with the spicy mixture.

Combine ice, vodka, Sriracha mix, bloody mary mix, and basil leaf into a shaker. Shake. Pour into rim-garnished glass and cilantro springs. Garnish with a toothpick skewered with pickle, tomato, and lemon wedge.

Red Snapper

Red Snapper Mix

Pinch of pepper
Pinch of garlic powder
Pinch of celery salt
Pinch of cayenne
Pinch of chili powder
Pinch of turmeric
Splash of Worcestershire
3½ ounces Clamato juice

The Cocktail

1 red bell pepper slice, muddled
1 cucumber wheel, muddled, plus one for garnish
1½ ounces Seersucker Southern Style Gin
½ ounce lemon juice
3½ ounces Red Snapper mix
3½ ounces Tajin (available at retailers everywhere), for garnish

Combine Red Snapper mix ingredients in a glass and stir.

Add all red pepper slice and cucumber wheel into cocktail shaker, and muddle. Add the remain cocktail ingredients, plus ice, into the shaker. Shake. Pour contents (including ice) into a chilled highball glass. Garnish with cucumber wheel and Tajin.
